The farm is meticulously designed from the ground up to ensure the well-being of these revered cattle, employing traditional farming methods to provide abundant high-quality wild grazing during summer and carefully cultivated crops for winter. This predominantly pasture-fed approach, in contrast to the traditional Japanese diet of rice straw and whole crop silage, results in beef that not only boasts the exquisite umami marbling characteristic of Wagyu, but also delivers an exceptional strong beefy flavour derived from their unique terroir and natural grass diet. To enhance the quality even further, we carefully dry age the whole primals for up to 35 days, offering the only dry-aged 100% Pureblood British Wagyu available in the UK. This meticulous process deepens the flavour and tenderness of our beef, making it a truly unique experience.
