Each is individually graded and certified before we dry age whole primals in our Custom-made Himalayan salt chamber for up to 90 days. With 200-million-year-old salt blocks, an air purification system that sterilises the air 10 times an hour and 24 hour humidity and temperature monitoring this ancient process combined with state of the art equipment combines to create our Pasture fed Reserve selection of bone in steaks and sharing cuts. Trimmed extra thick to help facilitate that all important outer caramelised crust.
