Hand crafted in-house, Our Heritage Dry aged Smash Burger stands out for its uniqueness. With a traditional coarse ground texture reminiscent of hand chopped mince, It combines meticulously trimmed dry-aged beef fat, Hereford chuck steak, and a modest measure of heritage breed ox heart. Surprising to many, ox heart carries a distinctly mild but beefy flavour, boasts a naturally high protein content, and proves absolutely sensational when ground up for our signature burger. Our burgers are simply balled fresh from the grinder and are thoughtfully sized at 3-4oz 100-125g each, poised for smashing to achieve that coveted crust.
Please note these burgers are designed to be smashed.... they are not remotely like the texture-less pureed beef versions found in the supermarket, and are likely to break slightly when cooked, this is intentional as all those little edges caramelise on the griddle plate. They contain no binding agents, sulphites, additives, flour, bulking agents, water, sugar or any seasoning at all, as unlike sausage meat which is seasoned well before grinding in order to break down the meat proteins to form a tight cohesive structure. A burger's joy lies at the other end of the spectrum. It requires a loose, coarse, open structure, allowing the meat to break down into small pieces in your mouth, while providing plenty of hiding spots for hot juices to collect inside the patty.
SO PLEASE SEASON LIBERALLY BERORE COOKING
While it's just our recommendation, we suggest savouring two per person to fully appreciate their exceptional beefy taste and quality, alternatively an individual burger is the perfect size for a child. Just remember you want to handle your smash burgers as little as possible as excessive handling can cause the proteins in the meat to break down and become compacted.. Simply remove from packet, and using the included burger paper squash down using the back of a firm spatula on to a smoking hot griddle.
