The Darne is a cross section cut from a large round fish such as salmon, crosscuts from flatfish are called troncons. Both come with skin on and contain a section of the backbone. The bone helps retain moisture during cooking so this is an ideal cut for high heat methods such as char-grilling and broiling. Think "Big fat juicy T-bone steak on the BBQ" We can only sell this cut freshly frozen since the whole fish must be portioned as steaks when fresh.

Our traditional way of preparing seafood flies in the face of modern production because we rely on real people taking their time and using age-old skills rather than cutting corners with rows of machines.
