In fact anything does! So any excess fat trimmed from our Heritage aged beef and not used in our smash burgers is first ground, then slowly rendered with aromatic; thyme, rosemary, bay leaf, pink peppercorn and garlic to create a uniquely flavoured fat. You've seen flavoured olive oil, well let us introduce you to our infused beef tallow, with a high smoking point and deep beefy flavour, this is the secret ingredient for perfectly crispy chips and roast potatoes. It also negates the need for adding extra aromatics to the pan when cooking your beef, just add a little of our tallow, a knob of butter and baste liberally for caramelised beefy heaven.
