Sea bream... with its beautifully delicate firm flakes is best cooked simply and paired with fresh med flavours, allowing the bream to take centre stage. Score the whole fish and marinate it in olive oil, and stuff with fresh oregano and sliced lemon and simply roast or pop on the BBQ. Serve with a wedge of lemon and a fresh zesty salad.
