Sourced and slow grown for two years in farms built on fast flowing pure chalk stream water from the world famous Test and Itchen Rivers these fresh water fish are experiencing a resurgence in popularity and rightly so!! A personal favourite from my youth fishing in Scotland. Simply bake whole with lots of herbs and butter for a stunning meal of nutty, sweet flavoured and tender fish.
