Swordfish is a firm textured game fish, similar to tuna, but with a mild, slightly sweet flavour. If you’re planning a barbecue and want to offer a delicious fish option, grilled swordfish is the way to go. Make sure not to overcook, they have low fat content so will become chewy or dry if overcooked. Alternatively try braising slowly with olives, tomato and capers.
