Portioned from only the finest whole boned ribs of Black wagyu with a BMS of +10 This legendary cut of beef is imbued with natural, intramuscular marbling as well as its legendary 'nugget' of fat, also known as the 'eye', making it one of the richest cuts of Wagyu available. This cut of beef is so good the less you do to it the better. Although the temptation to is to cook this steak in the American/European style, instead we recommend you cook it as in Japan, straight from the fridge (melting point of Wagyu is considerably lower than other steaks, so handle as little as possible), simply season with salt and pepper, cook on high heat till golden brown on both sides and MR and, serve sliced straight off the heat with simple garnish.
IMPORTANT:
Although we offer the cut in a 300g sized portion, owing to the shear size of the Ribeye muscle in A5 Wagyu the provided steak can often be a little as a cm thick. Therefore we also offer the choice of a larger 500g/1kg portions which can provide thicker easier to cook steaks.
