In the realm of gourmet burgers, our creation reigns supreme. Where every meticulous step is skillfully executed only by hand. It commences with the selection of only the finest cuts of our Apple fed Wagyu Sussex beef, a trifecta of shin, chuck and bone marrow. Precise ratios of Wagyu fat, beef, and marrow converge, each element contributes its own signature notes. The alchemy continues as these components are ground together, not once, twice, but three times, ensuring an exquisite blend. Our burgers are not perfectly round and uniform, in fact unlike other so called artisan purveyors our's never so much as touch a burger press let alone a machine, they are entirely hand-formed and unseasoned, a process that prevents the ground meat becoming overworked, tough and compressed. They are 100% pure beef and will therefore require a liberal seasoning just before cooking.

At a very generous 8oz/225g and an inch thick they are not for the faint hearted. It's form is in stark contrast to our dry-aged smashed burgers but it stands as a testament to those who wish to enjoy their burger maybe not smashed but char grilled to perfection on the outside whilst still juicy and pink on the inside.
