The Kansas city strip steak (sirloin in the UK) comes from the short loin of the animal, right behind the rib area. Meticulously crafted through an extensive dry aging process and with a lovely coating of fat this steak embodies the tenderness and flavour of USDA Prime steaks. The aging process allows the beef to develop rich, concentrated flavours whilst achieving the ideal texture. Often described as half way between the filet mignon and the ribeye this is one of the most popular steaks sold at US steakhouses and for good reason. Personally it's all I eat when I visit my brother in Kansas... I love it with a really good coating of Montreal Steak Seasoning before chargrilling it over open coals and finished with a little of our cowboy butter. Kansas and Dorothy here I come.
