Sourced from the multi award-winning Mirai Farm our revered cattle are hand-raised in the pristine mountainous and forest-rich landscapes of Kagoshima in a strictly controlled stress free environment. Their carefully curated diet of rice, hay and pasture combined with decades of careful breeding contribute to the remarkable intramuscular marbling that makes it the most desired beef in the world.

With an intramuscular marbling score of BMS +10, this cut represents the pinnacle of Wagyu beef from Japan. Regarded as one of the world's true delicacies, A5 Wagyu fillet is celebrated for its exquisite melt in the mouth texture, rich umami flavour and buttery marbling that cannot be matched by Wagyu reared anywhere else in the world.

Expertly cut only from the center of a whole A5 fillet. Each steak is meticulously trimmed, removing excess fat to maximize the meat ratio and provide the best value. Due to its inherent richness this is not the breed or cut for customers searching for a big juicy caramelised steak but instead those who wish to experience Pureblood Wagyu as in Japan. We therefore recommend a maximum portion size of 150g per person and cooking very simply...with just salt and pepper to truly appreciate it's unique qualities.
For authenticity, each Japanese Wagyu cattle is assigned a unique traceability ID number from birth, prominently displayed on the packaging. You can verify the authenticity of your purchase using this ID number.
