Halibut is the largest flatfish species in the sea and is a top choice for chefs and restaurateurs due to its incredible flavour. It has a very firm, lean meaty texture, and a subtle, sweet tasting creamy white flesh which is just divine. Owing to its delicious lean flesh it can be susceptible to dryness if overcooked, so it's best to serve it simply grilled or briefly pan fried with lots of butter and lemon.
