Our thick cut portions are hand prepared from only the best extra large mature wild cod, sustainably caught from the North Sea and shipped daily from Peterhead in Scotland. For us roasted or braised is the cooking method of choice. Also available as "Royal cut" where we expertly trim a whole side of boneless skin on Cod to create a perfectly even thick rectangle of prime centre cut loin that cooks evenly throughout. Ideal roasted as a dinner party centerpiece to feed four to six.
